Your Last Meal Before Dieting
(or, Your First Meal After Giving Up)

When you come to a fork in the road, pick it
up and start eating! Unless you're on a diet, then look at the fork, sulk, sigh, remember that last meal you ate before dieting and look forward to the hedonistic feeding frenzy that awaits you when you hit your goal weight.

Breakin' the Rules Borscht with Bacon

 

4 nice sized beets (about a pound), peeled and shredded
4 pieces of bacon, cooked and chopped
1 small onion, chopped
3 carrots, chopped
4 cups of beef broth
3 cups of water
the juice of a half a lemon
4 tablespoons of sour cream
salt and pepper

Put the beets, broth and water in a pot, bring to a boil and simmer for 20 minutes. Add the carrots and onion and simmer for 20 more minutes. Remove from the heat and add lemon juice, salt and pepper.

You could serve this hot, as is, or cold by chilling for a few hours or overnight in the fridge.

When serving, put a tablespoon of sour cream into each bowl, and sprinkle with the bacon.

Serves 4.
