Wash and dry the baby spinach leaves. Peel and slice the carrot thinly. Peel the ugli fruit with your hands. Cut between each membrane to release the segments. Squeeze what is left over of the ugli fruit into a measuring cup to get about a 1/4 cup of juice. Add salt, pepper and olive oil to the juice and whisk to make the dressing. Mix everything together and serve. Serves 2.
