Pan Roasted Mahi Mahi with Passion Fruit

2 Mahi Mahi filets (1 pound total)
1/2 of a Vidalia or Maui sweet onion, sliced
3 passion fruits
1 tablespoon of soy sauce
1 teaspoon of ginger, minced
2 tablespoons of butter

Cut the passion fruits in half and scoop out the fruit inside, keeping in a bowl for the time being. Discard the passion fruit rinds.

Put a nice heavy pan on medium heat and add 1 tablespoon of butter. Once hot, add the Mahi Mahi filets and cook for 3 minutes per side. Remove and keep warm.

In the same pan, add the remaining tablespoon of butter, and cook the onion and ginger for 5 minutes until it begins to caramelize. Turn off the heat, and deglaze the pan by splashing in the soy sauce and passion fruit and stirring gently with a spoon. Pour the sauce on the fish.

Serves 2.
