Wash the rice with water until it runs clear. Put enough water to cover the rice and let soak for 20 minutes. Drain out the water. Slice the mushrooms. Bring 1 1/4 cup of water to a boil. Add the mushrooms, sake, soy sauce and drained rice. Bring to a simmer, put heat on the lowest setting and cover tightly. Cook for about 15 minutes, then remove from heat keeping the lid on and steam for 5 more minutes. Fluff. Serves 2.
