matsutake

Matsutake Rice

1 matsutake mushroom
1 cup of Japanese rice
1 tablespoon of soy sauce
2 tablespoons of mirin (a Japanese sweet rice wine used for cooking)
1 1/4 cup of water

Wash the rice with water until it runs clear. Put enough water to cover the rice and let soak for 20 minutes. Drain out the water.

Slice the mushrooms.

Bring 1 1/4 cup of water to a boil. Add the mushrooms, sake, soy sauce and drained rice. Bring to a simmer, put heat on the lowest setting and cover tightly. Cook for about 15 minutes, then remove from heat keeping the lid on and steam for 5 more minutes. Fluff.

Serves 2.
