Grilled Enoki Bacon Wraps

2 packages of fresh enoki mushrooms (about 6 ounces)
6 slices of center cut bacon (that is, bacon with a nice amount of meat)
4 wooden skewers, soaked in water for a few minutes

Cut each bacon slice in half making two fat pieces.

Take a 1 inch wide bunch of enoki and cut off the root ends. Carefully cut into 2 inch lengths (slightly wider than the bacon). Wrap each enoki bundle with a piece of bacon, and put on a wooden skewer, securing the bacon. You should be able to fit 3 or 4 enoki wrapped bacon pieces per skewer.

Grill the skewers for about 5 minutes, turning occasionally until the bacon is crispy. Be sure to keep a close eye on them while grilling so they don't burn.

Serves 4.
