An
alarming trend has swept across America and the world. As
people begin to adopt a new "healthier" lifestyle,
they find themselves willing to acquire the dietary habits
of rodents and to compromise ingredients in some of the most
sumptuous recipes in the world. Suddenly, supermarkets are
inundated with items boasting their "fat free" or
"lite" quality. Suddenly, everyone is convinced
that if they don't cut out the fat and the cholesterol, they
will die of a heart attack by the age of 32. Suddenly, people
are feeling guilty every time they eat something that actually
has flavor...
Repression,
however, is the fickle mother of sloppy rebellion. A strong,
brave few continue to use heavy cream, butter, rendered fat,
salt, sugar, and whole milk. These dissident gourmets have
pursued those recipes that represent the essence of "real"
cooking. They have scoured antique shops, garage sales, and
libraries to find the precious volumes that contain recipes
unadulterated by the mindless censorship of the health mongers.
They are culinary supermen; they are intractable, generation-x,
renaissance men zealously defending a noble cause; they are
obstinate guerrillas in a silent war of ideology; and they
eat dangerously to defend their beliefs
Eating dangerously,
though, is more than a manifestation. It is an attitude, a
lifestyle, a credo that enables each of us to attain daily
pleasure. It is a system of beliefs based on equilibrium,
a notion apparently forgotten by all those who indiscriminately
deprive themselves of pleasure, often, for the sake of unworthy,
unfounded, and illogical notions of what is "healthy."
Eating dangerously, in essence, is the first step in a process
of liberation from unwarranted self-control; it is a philosophy
which allows its supporters to free themselves from the unnecessary
self-flagellation that society would have them apply; it is
a process by which, ultimately, each of us can learn to ignore
the guilt that has come to be associated with simply being
human. It allows us to find the delicate balance between promoting
our own pleasure and preserving the interests of our world
and the people around us
Throughout
this book we attempt to provoke and delight you, the reader,
with wonderful food and prosaic slices of life and wisdom.
Our goal is to help you to help yourself. Free your taste
buds and your mind will follow! Learning to eat dangerously
with joy and pride will allow you to experience the full flavor
of life and, with luck, will lead you to a whole new perspective
on living in general
