Chicken from Somewhere in France (Poulet Vallee D'Auge)
How to seduce with food? You must pick the right type of dish for your target-du-jour. You must determine if they are sweet or tart? Hard or soft? Should they be seared? Lightly sauteed? Or flambeed? If You'don't know your flavor of the month well enough, cook the following. It combines numerous cooking styles and has never ever failed to get results whether they are blond and British, dark and Lebanese, or frizzy and American.


1/2 cup of calvados or regular brandy
2 kosher chicken breasts, skinless and boneless
2 tablespoons of butter
1 cup of apple juice
1 sliced onion
1 crushed clove of garlic
1/2 teaspoon of fresh thyme leaves
4 teaspoons of Dijon mustard
1 cored and sliced apple

Heat butter over medium-high heat and sear chicken then saute 3 minutes per side until golden brown. Add apple juice, onion, garlic and thyme. Cover and cook for 10 to 12 minutes or until chicken is cooked but still tender. Remove chicken. Turn burner on high, add brandy and ignite. Reduce the sauce slightly. Add mustard and sliced apple. Stir well and serve over chicken.
