1/2 cup of calvados or regular brandy
2 kosher chicken breasts, skinless and boneless
2 tablespoons of butter
1 cup of apple juice
1 sliced onion
1 crushed clove of garlic
1/2 teaspoon of fresh thyme leaves
4 teaspoons of Dijon mustard
1 cored and sliced apple

Heat butter over medium-high heat and sear chicken then sauté 3 minutes per side until golden brown. Add apple juice, onion, garlic and thyme. Cover and cook for 10 to 12 minutes or until chicken is cooked but still tender. Remove chicken. Turn burner on high, add brandy and ignite. Reduce the sauce slightly. Add mustard and sliced apple. Stir well and serve over chicken.
