Batter:
3 eggs
1 cup flour
1 cup water
dash of salt
1 tablespoon of butter

Filling:
1 egg
8 ounces of softened cream cheese
8 ounces of farmer's cheese
heaping tablespoon of sour cream
dash salt
dash vanilla extract
2 tablespoons of sugar

Mix up ingredients for batter.

Mix up ingredients for filling.

Use a small pan and make the blintzes the same way as crepes: Heat the butter in the pan on a medium heat. Pour in only enough batter to thinly coat the bottom pan. The first one never works, so throw it out. Flip once, when the batter is not yet cooked but no longer runny. This will take about a minute per side.

Cool the crepes, and fill with filling. Fold into rectangles.

Frying the finished blintzes for thirty seconds is optional.

Serve with sour cream or apple sauce.

Makes about 10 blintzes. How many per person? Well, that's up to you. You're obviously in charge since you're cooking.
